Basic Canadian  Poutine with Air Fryer French Fries

Serves 4-6

Ingredients:

4 lb. Russet potatoes, skin-on, washed and dried 4 T.. unsalted butter 1⁄4 c. flour 1 shallot, minced 4 c. beef stock 2 T. tomato paste 1 T.. cider vinegar 1 T.. whole green peppercorns 1⁄2 t.. Worcestershire sauce Salt and freshly ground black pepper 2 c. cheddar cheese curds (purchase here) or chunks of full fat mozzarella 2 T. olive oil

Directions:

Cut potatoes into lengths of about 1⁄4" x 1⁄4" x 4". Place in a large bowl, cover with cold water, and refrigerate for about 2 hours.

Heat butter in a large  saucepan over medium-high heat. Add flour, and cook, stirring, until smooth, about 2 minutes. Add shallot and cook until soft, about 2 minutes. Add stock, tomato paste, vinegar, peppercorns, Worcestershire, and salt and pepper. Bring to a boil and cook, stirring, until thickened, about 6 minutes. Remove from heat, and keep gravy warm.

Preheat the air fryer to 320 degrees F. Place the potato slices in a bowl and drizzle with olive oil, then toss to coat. Place them in the air fryer basket and cook for 16 minutes. Slide the basket out, shake the fries around and slide the basket back in. Raise the temp to 350 degrees F. and cook for another 12 minutes, shaking mid-way.

Top the fries with half the cheese curds and then hot gravy, then more curds.  

Optional toppings: pulled pork, duck confit, baked chicken, scallions, mushrooms, hamburger meat.
